The festival of Christmas commemorates the birth of Jesus Christ who is the Messiah of God. Although it is a Christian festival, people from different communities celebrate it with great joy and enthusiasm on December 25 every year.
Any festival does not make sense when we don’t eat sweets. Sweets become an integral part of any festival. And christmas without plum cake is incomplete. So, what are you for make your perfect Christmas cake at home in this Corona crisis.
How to make Christmas cake
Here is the list of ingredients you will need for Christmas cake:

1kg mix dried fruit (like using a mix of raisins, currants, cherries, cranberries, prunes or figs any)

150ml brandy, whisky or rum, plus extra required for feeding

250g pack butter

200g sugar (brown)

175g plain flour

100g almond (ground)

½ tsp baking powder

2 tsp mixed spice

1 tsp cinnamon

¼ tsp cloves

100g flaked almonds

4 big white eggs

1 tsp extract of vanilla

STEP 1
Put 1kg mixed dried fruit, the zest of orange juice and lemonade, 150ml brandy mainly preferred or other

, 250g melted butter and 200g (brown) sugar in a large pan set over medium heat.
STEP 2
Bring to the boil, then lower the heat and simmer for five minutes and tip the fruit mixture into a large bowl and leave to cool for 30 minutes.

Keep Heat oven to 130-150C and line a deep 20cm cake tin with a double layer of baking parchment, then wrap a double layer of newspaper around the outside tie it with string to secure.

Add about 175g of flour, 100g ground almonds, ½ tsp baking powder, 2 tsp mixed spice, 1 tsp cinnamon, ¼ tsp cloves, 100g flaked almonds, 4 big white eggs and 1 tsp extract of vanilla to the fruit mixture and stir well, making sure there are no pockets of flour.
STEP 5
Tip into your prepared tin, level the top with a spatula and bake in the centre of the oven for two hrs.
STEP 6
Remove the cake from the oven, poke holes in it with a skewer and spoon over 2 tbsp of your chosen alcohol and leave the cake to cool completely in the tin.
STEP 7
To store, peel off the baking parchment, then wrap well in cling film. Feed the cake with 1-2 tbsp alcohol every fortnight, until you ice it then you don’t need to do.
STEP 8
Don’t feed the cake for the final week to give the surface a chance to dry before icing and them it is ready to serve for 4 to 6 people.
