Preparation Method

Step 1: Peel and Prepare the Garlic

Peel fresh garlic cloves and allow them to dry completely. Ensure there's no moisture, as it can spoil the pickle.

Step 2: Lightly Sauté the Garlic

Heat a small amount of oil in a pan. On a low flame, sauté the garlic for 2 to 3 minutes until it turns slightly golden. Do not overcook.

Step 3: Prepare the Spice Mix

In a bowl, combine mustard seeds, red chilli powder, turmeric, salt, fenugreek seeds (or powder), and asafoetida. Mix well.

Step 4: Combine Garlic and Spices

Add the sautéed garlic to the spice mix. Toss well so that each clove is evenly coated with the masala.

Step 5: Add Oil and Mix Thoroughly

Heat mustard oil until it reaches its smoking point, then let it cool slightly. Pour this warm oil over the garlic mixture and stir well to combine everything evenly.

Step 6: Store and Let It Mature

Transfer the pickle to a clean, dry glass jar. Keep it in direct sunlight for 3 to 4 days. Shake the jar daily to mix the contents evenly. Once it matures, your garlic pickle is ready to enjoy!
