Start by melting two tablespoons of butter in a large pot over medium heat. Sauté one clove of minced garlic for about a minute until fragrant. Add two cups of finely chopped broccoli florets and cook for 2–3 minutes. Pour in one cup of vegetable broth and simmer until the broccoli becomes tender. Reduce the heat and add one cup of heavy cream and two tablespoons of cream cheese, stirring until the cheese is fully melted and the mixture is smooth.

Add one and a half cups of shredded cheddar cheese and stir until the cheese is fully incorporated. For a creamier texture, use an immersion blender to partially blend the soup, or leave it chunky if you prefer texture. Season with salt, black pepper, and a pinch of nutmeg or red pepper flakes. Serve hot with an extra sprinkle of cheddar or some roasted seeds for crunch.

2. Lemon Chicken Soup with Cauliflower Rice 

Inspired by Greek avgolemono soup, this version swaps rice with cauliflower rice for a low-carb twist and includes egg for added richness.

In a saucepan, heat one tablespoon of olive oil and sauté half a chopped onion and one clove of garlic until soft. Add one cup of shredded cooked chicken (boneless, skinless) and stir for a couple of minutes. Pour in two cups of chicken broth and bring it to a simmer. Add half a cup of cauliflower rice and cook until tender. 

In a separate bowl, whisk together one egg with the juice of one lemon. Temper the egg mixture by slowly adding a ladle of hot soup while whisking, then stir the tempered mixture back into the pot. This thickens the soup slightly and gives it a creamy texture without adding dairy. Season with salt, pepper, and chopped parsley. Serve warm with a lemon wedge on the side.

3. Spicy Thai Coconut Soup with Tofu and Mushrooms

This fragrant soup is a plant-based keto delight. It uses coconut milk for creaminess and includes tofu for protein, making it a well-balanced vegan meal.

Start by heating a tablespoon of coconut oil in a soup pot. Sauté one tablespoon of Thai red curry paste (check that it’s sugar-free) for a minute to release its aromas. Add a few slices of fresh ginger and one stalk of lemongrass, gently smashed. Stir in two cups of sliced mushrooms and cook until they begin to soften. Add one cup of full-fat coconut milk and one and a half cups of water or vegetable broth. Simmer gently for 10 minutes. 

Add one cup of firm tofu cubes and cook for another five minutes. Finish the soup with soy sauce or tamari (for gluten-free), a splash of lime juice, and chopped fresh cilantro. Remove the lemongrass before serving. This soup is creamy, spicy, and soothing, perfect for rainy nights or when you're feeling under the weather.

4. Chicken Zucchini Noodle Soup 

This light yet satisfying soup mimics a chicken noodle soup but replaces the noodles with spiralized zucchini, keeping the dish low-carb and refreshing.

In a large pot, heat a tablespoon of olive oil and sauté one chopped onion, one chopped celery stalk, and a clove of garlic until soft. Add one cup of shredded cooked chicken breast and stir for a couple of minutes. Pour in three cups of chicken broth and bring to a boil. Reduce the heat and add one to two cups of spiralized zucchini noodles (zoodles). 

Cook for 2–3 minutes, just until the zucchini softens slightly but remains firm. Season with salt, pepper, and a pinch of thyme or oregano. Garnish with fresh parsley or a sprinkle of chili flakes for a mild kick. This soup is hydrating, nutrient-dense, and ready in under 30 minutes.

5. Egg Drop Soup with Spinach and Mushrooms 

Simple, soothing, and quick to prepare, egg drop soup is a traditional Chinese dish that fits perfectly into a keto diet when made without cornstarch. This version adds spinach and mushrooms for extra nutrients.

In a saucepan, bring two cups of vegetable or chicken broth to a gentle simmer. Add half a cup of thinly sliced mushrooms (shiitake or button) and simmer for about 5 minutes. Add a handful of fresh spinach leaves and let them wilt. In a small bowl, whisk two eggs. Slowly pour the beaten eggs into the soup while stirring in a circular motion to create thin, silky ribbons. Turn off the heat immediately once the egg is cooked. 

Season with a splash of soy sauce, white pepper, and a few drops of sesame oil. Garnish with chopped scallions or fresh coriander. This low-carb soup is ready in under 15 minutes and makes a comforting, protein-rich dinner on busy nights.
