Originating from Tamil Nadu, this deep-fried savory snack is traditionally prepared for celebratory and auspicious occasions, including temple festivals, weddings, and birthdays. Over time, vadas have evolved into many delicious variations, and one of the most popular among them is Chana Dal Vada, also known as Masala Vada or Paruppu Vada.

Ingredients

  • Chana Dal – 1½ cups

  • Onions – 1 cup, finely chopped

  • Curry Leaves – 1½ tbsp

  • Red Chilli Powder – 2 tsp

  • Hing (Asafoetida) – ½ tsp

  • Haldi (Turmeric Powder) – 1 tsp

  • Salt – to taste

  • Oil – for deep frying

To Blend Separately (Spice Mix):

  • Cumin seeds (jeera)

  • Fennel seeds

  • Dry red chillies

  • A small stick of cinnamon

Preparation Method

Step 1: Soak the Dal

Rinse the chana dal thoroughly and soak it for about 2 hours until softened.

Step 2: Prepare Spice Mix

In a blender, grind cumin, fennel seeds, dry red chillies, and cinnamon into a coarse powder.

Step 3: Blend Dal and Spices

Drain the soaked dal and add it to the blender along with salt. Pulse it into a semi-coarse mixture. Reserve 2 tablespoons of this mixture for later.

Step 4: Mix Ingredients

Transfer the blended dal into a mixing bowl. Add the reserved mixture, chopped onions, curry leaves, coriander, ginger-garlic paste, and remaining spices. Mix everything well until evenly combined but still slightly textured.

Step 5: Shape the Vadas

Divide the mixture into equal portions. Shape each portion into small balls or flat patties. Press gently to make them compact and firm.

Step 6: Deep Fry

Heat oil in a deep frying pan on medium flame. Carefully slide in the vadas, a few at a time, and fry them until they turn golden brown and crisp on all sides.

Step 7: Drain and Serve

Remove the vadas from the oil and place them on absorbent paper or a kitchen towel to remove excess oil. Serve hot.
